Millie's Rhubarb Custard Pie (9")

Millie's Pie Crust

1 1/2 cup flour
1/2 cup vegetable oil
2 Tablespoons milk
1/2 teaspoon salt
1 1/2 teaspoon sugar

Blend in pie pan, press into pie crust shape with fork and fingers

Millie's Rhubarb Custard Pie Filling

1 1/2 cup sugar
3 heaping Tablespoons flour
1/2 teaspoon nutmeg
1 Tablespoon butter
2 well beaten eggs
3 cups rhubarb, cut into small pieces

Blend together in large mixing bowl, pour into crust. Bake at 450 F for 10 minutes, then reduce heat to 350 F for another 35 to 40 minutes (watch!). Pie should be firm.

Serve with vanilla ice cream.
